This is Megan from Taiwan, as a real local Taiwanese, I got some local food recommendations, myself originally from Taichung city, been living in Taipei city for 4 years now.
1.First thing I miss the most when I lived in Italy was-lunch box
One main dish with three sides veges and rice, very cheap and diversity.
2.hot pot-Taiwanese LOVE hot pot, hot pot shops are EVERYWHERE, and we eat hot pot also in summer, once a foreign friend told me: I come to restaurant expect they cook for me because I pay, but hot pot I pay and I have to cook for myself? Yes we order several dishes (different kind of meat as your preference, meatballs, mushrooms, vegetables and soup base, most popular is spicy)

3.dumplings-I was trying to be vegetarian a while ago, but dumpling broke that down…anyway, there are many places with great dumplings, usually with beef noodles.
Price: 4-5ntd per dumpling, usually minimum order10 pz
4.chicken pork rice / pork rice – every local shops must have it, also night market, I personally prefer chicken pork rice.

1) salty pancake with different food material, like bacon, cheese, hot dog , basil, ham, corn, chicken, pork and tuna…etc
2)Taiwanese style hamburger with egg
3)Taiwanese sandwich with veges , cheese, eggs and meat
6.xiao long bao- must try food in Taiwan, the most famous place Din Tai Fung for tourist , price a bit higher than local small shops but definitely worth it to try out, best xiao long bao I ever had.
7.beef noodle-real good beef noodle is amazing, winter after long day work, beef boodle is one of the best choice, I prefer thick noodles over thin noodles, one of best place for beef noodle is w hotel Taipei.
8.taiwanese fried chicken- bigger than face whole slice of chicken with bones, some foreigners not used to have chicken with bones, but Taiwanese fried chicken very juicy smells amazing.
9.oyster omelette – one of the best night market food, omelette filling primarily composed of small oysters. Starch (typically potato starch) is mixed into the egg batter, giving the resulting egg wrap a thicker consistency

10.stinky tofu- always comes with Taiwanese kimchi, if you ask any Taiwanese they will definitely say stinky tofu is top three must try, but from my experience, less than 10% foreigners willing to try in the beginning, because it does smell like shit but you will get used to it like all Taiwanese .

11: bubble tea-best drink ever! I have had tried bubble tea in London and berlin, those colorful juice bubble aren’t as good as Taiwanese bubble, bubble teas are typically of two distinct types: fruit-flavored teas and milk teas, milk teas with brown sugar bubbles are best ones, I personally love passion fruit or orange juice with green tea and bubbles.

12.peanut powder roll with ice cream- it’s an ice-cream burrito! Tart and creamy from the ice cream, sweet and crunchy from the peanut candy shavings and the coriander gives it an extra aromatic layer.

13.fruit(mango) shaved ice- great for summer, the one in kh has big bowl for 10 people
14.bawan- is a large-sized Taiwanese dumpling, consisting of a 6–8 cm diameter disk-shaped translucent dough filled with a savory stuffing and served with a sweet and savory sauce.
15.oyster vermicelli- Its main ingredients are oysters and misua (Chinese vermicelli). One of the famous places serving this is in Dihua Street.

Shilin night market士林夜市- too touristy but still worth it to see, some food stands are over price, especially fruits.

Shi-Da Night Market (師大夜市)- students area, lots of foreigners so definitely have English menu.
Taipei Hwahsi Tourist Night Market(華西街觀光夜市)- famous for snake soup but kinda nasty place
Fengjia Night Market (逢甲夜市)- biggest night market in taichung city
The Top 屋頂上- best night view restaurant in taipei, price higher than usual price because great view.

Addiction上引水產- seafood market with fresh and super affordable seafood, sashimi and sushi.
